Cooking Sequence

  • Prepare steak and begin to grill (5 minutes)
  • Complete both recipes and serve (20 minutes)

Zesty Dijon Steaks

Ingredients

1 1/2 lb grilling steaks (such as NY strip, ribeye, or tenderloin)
1/2 teaspoon kosher salt
1/4 teaspoon pepper
2 tablespoons fresh chives, finely chopped
1/4 cup Dijon mustard
1/4 cup red wine vinegar
1/4 cup honey

Steps

  1. Preheat grill (or grill pan). Season steaks with salt and pepper. Place steaks on grill (or grill pan); grill 4–5 minutes on each side until 125°F (for medium rare; warm red center), 130°F (for medium; warm pink center), or up to 170°F (for well done).* Transfer to cutting board; let stand 5–10 minutes before slicing. Temperature will rise 5–10°F during this time.
  2. Chop chives and place in medium bowl; whisk in mustard, vinegar, and honey until blended. Drizzle steaks with sauce and serve.
*NOTE: the doneness temperatures for medium rare and medium stated above are traditional temperatures used for cooking but are not recommended by the USDA. To maintain food safety, the USDA recommends an internal temperature of 145°F, as measured using a food thermometer, with a 3-minute rest time before carving.

Warm Italian Potato Salad

Ingredients

2 medium russet potatoes
2 medium sweet potatoes
2 tablespoons fresh chives, finely chopped
1/2 cup mayonnaise
1/2 cup plain Greek yogurt
1/4 cup Italian seasoning herb paste
1/2 teaspoon kosher salt
1/4 teaspoon pepper

-- Preheat grill (or grill pan).
-- Peel potatoes and cut into 1-inch-cubes (about 6 cups total).

Steps

  1. Peel potatoes and cut into 1/2-inch cubes (about 6 cups total).
  2. Place potatoes in microwave-safe dish and cover; microwave on HIGH 10–12 minutes or until tender when pierced by a fork. Drain, if needed.
  3. Chop chives and place in large bowl; whisk in mayonnaise, yogurt, herb paste, salt, and pepper until blended. Add potatoes and toss until evenly coated; serve warm. Salad may also be chilled and served cold.
