Cooking Sequence

  • Prepare rice and begin to boil (15 minutes).
  • Prepare meatballs and stir fry (10 minutes).
  • Complete rice and meatballs; serve (5 minutes).

Sweet and Spicy Meatball Stir-Fry

Ingredients

1 (20-oz) package frozen cooked meatballs
2 tablespoons ginger teriyaki marinade
1 tablespoon peanut oil
1 tablespoon minced garlic
4 cups frozen Asian stir-fry (contains broccoli, carrots, water chestnuts, pea pods, red peppers, mushrooms and bamboo shoots)

Steps

  1. Place meatballs in microwave-safe bowl; cover and microwave on HIGH for 3 minutes, then drain, if needed. Pour marinade over meatballs; mix to coat evenly.
  2. Preheat wok (or large sauté pan) on high 2–3 minutes. Place oil and garlic in wok. Add meatballs and cook 3–4 minutes, stirring often, or until hot.
  3. Meanwhile, place vegetables in same microwave-safe bowl. Cover and microwave on HIGH for 3 minutes (do not drain).
  4. Add vegetables to meatballs and cook 4–5 minutes, stirring often, or until vegetables are tender. Serve over rice.

Asian Rice

Ingredients

1 tablespoon peanut oil
1 large egg
1 1/2 cups water
1 (5.4-oz) package teriyaki rice

Steps

  1. Preheat medium saucepan on medium-high 2–3 minutes. Place oil in pan and swirl to coat. Break egg in pan and scramble 1–2 minutes or until fully cooked.
  2. Stir in water and rice; cover and bring to boil. Stir and reduce heat to low. Cover and simmer 5 minutes or until rice is tender.
  3. Remove from heat and let stand 2–3 minutes, or until sauce thickens; serve.

  • Complete your meal with egg rolls, salad blend and angel food cake.

  • Add 1/2 cup roasted peanuts to step 4 of stir-fry for an authentic Asian touch.
