Baked Shrimp Scampi

Ingredients

Aluminum foil
1 lemon, for juice
1 tablespoon fresh Italian parsley
7 cloves garlic
1/2 teaspoon seafood seasoning blend
4 tablespoons unsalted butter
1 1/2 lb peeled/deveined large shrimp, tails removed (thawed, if needed)
2 tablespoons Italian bread crumbs

Steps

  1. Place oven rack 6-inches from broiler, then preheat oven on broil. Line baking sheet with foil.
  2. Squeeze lemon for juice (2 tablespoons); cut lemon into wedges. Place parsley, lemon juice, garlic, and seasoning in food processor bowl; pulse 5–6 times until blended.
  3. Cut butter into small chunks, then add to food processor; process until chopped and well blended. Transfer mixture to microwave-safe bowl; microwave on HIGH for 30–40 seconds or until butter melts.
  4. Arrange shrimp in single layer on baking sheet (wash hands). Pour butter mixture over shrimp; sprinkle with bread crumbs. Broil 5–6 minutes and until shrimp turn pink and opaque, and begin to lightly brown on the edges. Serve with lemon wedges.

Spiced Green Beans

Ingredients

1 (14-oz) package frozen whole green beans
1 cup water
1 tablespoon diced pimientos
1 tablespoon unsalted butter
1/2 teaspoon seafood seasoning blend

Steps

  1. Place beans and water in microwave-safe bowl and cover; microwave on HIGH for 8 minutes or until tender.
  2. Drain; add remaining ingredients. Microwave on HIGH for 1–2 more minutes to blend flavors. Stir and serve.
