Dark Chocolate Truffles

Ingredients

1 1/2 cups heavy cream
2 teaspoons vanilla extract
1 tablespoon port wine
16 oz (60%) bittersweet chocolate chips
1 cup cocoa powder

Steps

  1. Combine in small saucepot: heavy cream, vanilla, and wine until blended. Heat to a simmer over medium. Add chocolate chips to bowl and cover with warmed cream mixture. Let stand 3–4 minutes, then slowly stir until blended and smooth. Set aside to cool to room temperature, then chill 30–40 minutes until firm.
  2. Sift cocoa onto a baking sheet. Form/scoop chilled chocolate mixture into 1-inch balls and roll until smooth. Dredge each truffle in cocoa powder and chill until ready to serve.

Dried Fruit Truffles

Ingredients

6 dried prunes, pitted
1/2 cup dried chopped dates
1/2 cup golden raisins
1/4 cup walnuts pieces
1 tablespoon clover honey
1/4 cup confectioners’ sugar

Steps

  1. Combine in bowl of food processor: prunes, dates, raisins, walnuts, and honey. Pulse to coarsely chop and combine.
  2. Place confectioners’ sugar in medium mixing bowl. Scoop fruit mixture into 12 evenly sized balls; roll until smooth. Dredge each ball in sugar and coat well. Chill until ready to serve.

Pistachio Nougat

Ingredients

Nonstick aluminum foil
Nonstick cooking spray
2 cups sugar
1 1/2 cups light corn syrup
1/4 teaspoon kosher salt
1/4 cup water
2 large pasteurized eggs, separated for whites only
1/2 teaspoon almond extract
Green food coloring
4 tablespoons unsalted butter, softened
1 cup roasted, shelled pistachios kernels

Steps

  1. Line 8- x 8-inch baking dish with foil then coat with spray; set aside.
  2. Combine in 4-quart saucepan: sugar, corn syrup, salt, and water until blended. Bring to boil over medium-high. Stir until sugar is dissolved; continue boiling, without stirring, until mixture reaches 250°F (hard ball stage) as measured with a candy thermometer.
  3. Separate egg whites from yolks (reserve yolks for another recipe). Beat egg whites in stand mixer on medium-high until stiff peaks form; slowly pour in one-quarter sugar syrup and continue beating until mixture holds its' shape.
  4. Heat saucepan with remaining sugar syrup over medium-high until 300°F (hard-crack stage). Pour remaining syrup into egg white mixture, with mixer running on medium-high speed, and continue beating until mixture is thick and stiff, 8–9 minutes.
  5. Fold in almond extract, and a few drops green food coloring to tint nougat a light-pale green. Fold in softened butter and pistachios. Transfer nougat to prepared pan and smooth evenly. Set aside to cool to room temperature. To serve, slice into 1-inch squares.

Dried Apples

Ingredients

4 lemons, for juice (1/2 cup)
1 gallon cool water
2 lb Gala apples (about 5 apples)

Steps

  1. Squeeze lemons for juice (1/2 cup). Combine in large mixing bowl: water and lemon juice.
  2. Core apples and slice 1/8-inch thick. Add slices to bowl with lemon water and soak 10 minutes.
  3. Drain apple slices and arrange on food dehydrator, spacing evenly. Dehydrate according to manufactures instructions.
TIP: apples can be substituted with pears, Asian pears, and other apple varieties.
