Winter Holiday Salad with Fig–Dijon Dressing

For the Winter Holiday Salad
2 persimmons (or oranges), sliced
1/2 cup Manchego cheese, cut into small pieces
1/4 cup toasted pistachios, coarsely chopped
4 cups bitter greens (such as curly endive, or endive with radicchio)
2 cups mixed sweet apple slices
1 cup seedless red and green grapes

For the Fig–Dijon Dressing
2 lemons, for juice
1 cup fig preserves
2 teaspoons Dijon mustard
1/2 cup olive oil


  1. Prepare salad. Slice persimmons. Cut cheese into small pieces; chop nuts.
  2. Arrange bitter greens on serving platter; top evenly with persimmons, apples, grapes, cheese, and pistachios. Drizzle with 1/2 cup Fig-Dijon dressing (recipe continues).
  3. Prepare dressing. Squeeze lemons for juice (1/4 cup). Combine figs, lemon juice, and Dijon in a medium bowl; whisk until blended. Slowly add olive oil, whisking thoroughly, until incorporated.
