Warm Italian Potato Salad

2 medium russet potatoes
2 medium sweet potatoes
2 tablespoons fresh chives, finely chopped
1/2 cup mayonnaise
1/2 cup plain Greek yogurt
1/4 cup Italian seasoning herb paste
1/2 teaspoon kosher salt
1/4 teaspoon pepper


-- Preheat grill (or grill pan).
-- Peel potatoes and cut into 1-inch-cubes (about 6 cups total).


  1. Peel potatoes and cut into 1/2-inch cubes (about 6 cups total).
  2. Place potatoes in microwave-safe dish and cover; microwave on HIGH 10–12 minutes or until tender when pierced by a fork. Drain, if needed.
  3. Chop chives and place in large bowl; whisk in mayonnaise, yogurt, herb paste, salt, and pepper until blended. Add potatoes and toss until evenly coated; serve warm. Salad may also be chilled and served cold.
