Vegetable Stir-Fry

1 medium sweet onion, thinly sliced
3 cloves garlic, finely chopped
1–2 carrots
1 medium green bell pepper
1 tablespoon olive oil


  1. Peel and slice onion; chop garlic. Trim carrots and peppers; cut into 1/4-inch pieces (1/2 cup each).
  2. Preheat oil in large sauté pan on high for 2–3 minutes. Add remaining ingredients; cook 9–11 minutes, stirring constantly, or until vegetables are tender.

Other Preparation Methods

  • Grill: Preheat grill. Slice 1 onion into 1/2-inch-thick rings and grill in a grill basket over direct heat for 5–7 minutes or until tender.
  • Bake: Preheat oven to 425°F. Slice 1 onion; toss with beaten egg and coat with bread crumbs. Place on foil-lined baking sheet; drizzle with oil and sprinkle with salt. Bake 10–12 minutes or until golden.
