Turkey and Vegetable Stir-Fry Tacos

Ingredients

2 cups angel hair slaw
1/4 cup presliced green onions
1 tablespoon sriracha
3 tablespoons seasoned rice vinegar, divided
8 small corn tortillas
Cooking spray
1 lb ground turkey
1 tablespoon canola oil
1 (16-oz) package stir-fry vegetables
3 tablespoons hoisin sauce

Steps

  1. Place in large bowl: slaw, green onions, sriracha, and 2 tablespoons vinegar; toss to coat, then set aside. Preheat large, nonstick sauté pan on medium-high 2–3 minutes. Coat tortillas with spray; cook 1 minute on each side, then set aside.
  2. Add turkey to pan. Cook 4–5 minutes, stirring to crumble meat, and until no pink remains; drain. Pour oil and vegetables into same pan; cook and stir 2–3 minutes or until vegetables are tender.
  3. Return turkey to pan with vegetables. Stir in hoisin and remaining 1 tablespoon vinegar. Divide turkey and vegetable mixture evenly between tortillas; top with slaw and additional sriracha if desired. Serve.
