Ingredients

Cooking spray
2 1/2 cups frozen diced butternut squash
1 cup frozen chopped spinach
4 slices multigrain bread
2 tablespoons fresh cilantro, finely chopped
8 oz cooked roasted turkey (or chicken), shredded
1/2 cup fresh garlic salsa (from Deli)
1 cup egg substitute
1 cup shredded cheddar cheese
1/2 cup sour cream

Steps

  1. Preheat oven to 375°F. Coat nonstick 12-cup muffin pan with spray. Place squash and spinach in microwave-safe bowl; microwave on HIGH for 2–3 minutes or until tender.
  2. Cut bread into 1/2-inch cubes. Chop cilantro. Shred turkey (about 2 cups). Combine in large bowl: bread, cilantro, squash, spinach, turkey, and salsa; stir until blended.
  3. Place egg, cheese, and sour cream in blender; pulse 2–3 times or until mixture is smooth. Pour egg mixture into bread mixture and stir until blended. Spoon bread mixture into muffin cups (filling to the top); bake 15–16 minutes or until puffed and browned on top. Serve.
