Tropical Holiday Fruit Salad

3 limes, for zest/juice
2 tablespoons fresh mint, finely chopped
1 papaya (about 1 lb)
2–3 mangoes (about 1 lb)
2 lb fresh tropical fruit salad (fresh pineapple, strawberries, kiwi)
3 tablespoons honey


  1. Zest lime (1 teaspoon) and squeeze for juice (3 tablespoons). Chop mint. Cut papaya in half lengthwise; remove seeds and peel. Peel mango and cut away from pit. Chop papaya and mango into 1-inch chunks. Halve strawberries, if desired.
  2. Combine in small bowl: lime zest and juice, and honey until blended. Place in serving bowl: contents of fruit salad, papaya, mango, and mint.
  3. Pour honey mixture over fruit; toss to coat. Chill until ready to serve.
