Ingredients

3 medium bell peppers (assorted colors)
1 (16-oz) jar chunky salsa, divided
1 (8.8-oz) package precooked white rice
2 cups chili (such as Publix Aprons Ranchero Beef Chili)
2 cups Mexican-blend shredded cheese, divided
Nonstick Aluminum foil
1/2 bunch fresh cilantro, coarsely chopped
1 Hass avocado (optional)

Steps

  1. Preheat oven to 400°F. Cut peppers in half (remove seeds and membranes). Pour salsa evenly into a 13- x 9-inch baking dish; arrange peppers over salsa, cut-side up. Combine in medium bowl: rice, chili, and 1 cup cheese; spoon chili mixture evenly into peppers.
  2. Cover dish with foil; bake 45 minutes. Remove foil and top evenly with remaining 1 cup cheese; bake 8–10 more minutes or until peppers are tender and chili is 165°F.
  3. Chop cilantro (1/2 cup). Peel, pit, and chop avocado (if using). Top stuffed peppers with cilantro and avocado; serve.
