Ingredients

1/2 cup cornstarch
3/4 cup sugar
1/4 teaspoon kosher salt
4 cups coconut milk
1 cinnamon stick
1/2 teaspoon ground cinnamon

Steps

  1. Whisk cornstarch, sugar, and salt until blended. Transfer mixture to medium saucepan; whisk in coconut milk.
  2. Add cinnamon stick and bring mixture to boil, stirring constantly. Reduce heat to low; simmer 5–6 minutes, stirring constantly, or until mixture becomes very thick.
  3. Remove cinnamon stick; pour pudding into 9-inch round cake (or pie) pan. Chill 1 1/2–2 hours or until firm and set. Sprinkle with cinnamon; slice and serve.
