Sweet Potato Kale Salad

2 medium sweet potatoes
1 tablespoon canola oil
1/2 teaspoon kosher salt
1 (12-oz) bag sweet kale vegetable salad kit (contains kale and other green veggies, pumpkin seeds, dried cranberries, and poppy seed dressing)
1/2 cup crumbled feta cheese


  1. Preheat oven to 350°F. Peel potatoes and cut into 1/2-inch cubes. Coat potatoes with oil and salt, then place on baking sheet; bake 12–15 minutes or until tender when pierced with a fork. Let stand 3 minutes to cool.
  2. Place all salad kit ingredients in salad bowl. Add potatoes and cheese; toss and serve.
