1/2 cup unsalted butter
1 cup dark brown sugar
2 tablespoons dark corn syrup
1/4 teaspoon kosher salt
1/2 cup pecan pieces
Cooking spray
1 bakery Brioche Loaf (about 14 oz)
5 large eggs (or 1 1/4 cups egg substitute)
1 1/2 cups half-and-half
1 teaspoon orange extract (or liqueur)
Aluminum foil


  1. Melt butter in medium saucepan on medium, then add brown sugar, corn syrup, and salt; cook and stir 2–3 minutes until sugar dissolves and mixture thickens. Remove from heat and stir in pecans.
  2. Coat deep, 9-inch square baking dish with spray; pour sugar mixture into dish. Trim ends from bread and cut into 4 equal slices; arrange bread in dish cut-side down.
  3. Combine eggs, half-and-half, and orange extract, then pour mixture over bread in dish. Cover with foil; chill 2 hours (or overnight).
  4. Preheat oven to 350°F. Bake mixture 30 minutes, then remove foil and bake 10 more minutes or until center is set. Let stand 5 minutes to cool, then carefully invert onto serving dish.

Other Preparation Methods

  • Snack: Coat 1 side of 4 (1-inch-thick) slices of brioche with softened butter. Coat other side with whipped cream cheese and strawberry jam. Combine to make 2 sandwiches, butter-side out. Cook 3–4 minutes on each side in a nonstick sauté pan on medium until golden.
  • Side: Preheat oven to 350°F. Cut brioche loaf into 1-inch cubes; bake 8–10 minutes or until toasted, then combine with 4 cups chicken broth, 8 oz trinity mix, and 1 lb cooked crumbled sausage. Bake 30–40 minutes or until center is set and top is golden.
