Smoked Trout and Chicories Salad

1 medium shallot, finely chopped
2 Belgian endives
1 1/2 tablespoons sherry vinegar
1 1/2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1/4 teaspoon kosher salt
1/4 teaspoon pepper
2 1/2 tablespoons vegetable oil
1 1/2 tablesoons walnut oil
1 Golden Delicious apple, sliced thinly
1 small head of chicory, torn
1/2 cup walnut halves
8 oz boneless smoked trout or whitefish
1 cup watercress


  1. Chop shallot; separate leaves from endive. Whisk shallot, vinegars, mustard, salt, and pepper until blended. Slowly pour in oils while whisking constantly.
  2. Slice apples; tear chicory into small pieces. Arrange endive, apple, frisee, walnuts, trout, and watercress on a serving platter. Drizzle with dressing. Serve.
