Cooking spray
1/2 cup pitted kalamata olives, halved
8 ounces cooked chicken sausage with apples, halved and sliced
1 medium fennel bulb, thinly sliced
2 cups pasta sauce
6 no boil lasagna noodles
1 cup ricotta cheese
1 1/2 cups shredded Monterey Jack cheese (or pepper jack)
1/4 cup shredded Parmesan cheese


  1. Preheat oven to 350°F. Coat 9-inch square baking pan with cooking spray. Halve olives. Cut sausage in half lengthwise and cut into 1/2-inch pieces. Slice fennel.
  2. Combine pasta sauce and olives; spoon 1/3 of sauce in prepared dish. Top with two lasagna noodles. Combine ricotta cheese and 1 cup Monterey Jack cheese; spoon half of the mixture on top of the noodles and sprinkle with 2 tablespoons Parmesan cheese.
  3. Top evenly with half the sausage and fennel; spoon half the remaining sauce over sausage. Top with two more noodles; remaining ricotta, sausage, and fennel. Add two more noodles and remaining sauce; sprinkle with remaining Parmesan cheese and shredded Monterey Jack cheese.
  4. Cover with foil; bake 50 minutes or until hot and bubbly. Let stand 20 minutes. Serve.
