Ingredients

4 lb Yukon Gold potatoes
4 cloves garlic, coarsely chopped
2 tablespoons unsalted butter
3 cups heavy whipping cream
1/4 cup all-purpose flour
2 teaspoons kosher salt
1/2 teaspoon pepper
1/4 teaspoon ground nutmeg
7–8 oz aged cheddar cheese, shredded (about 2 cups)

Steps

  1. Slice potatoes 1/4-inch thick. Chop garlic. Coat liner of 3- to 4-quart slow cooker with butter.
  2. Whisk cream, flour, salt, pepper, nutmeg, and garlic until thoroughly blended. Layer one-half of the potatoes in bottom of slow cooker, then top with one-half of the cream mixture. Repeat layers. Cover and cook on HIGH for 4 hours, stirring once, halfway through cook time.
  3. Shred cheese. Stir potato mixture, then top with cheese; re-cover and cook 30–40 more minutes or until cream mixture has thickened and potatoes are tender when pierced with a fork. Stir potatoes and serve.
