2 1/2 lb boneless chuck roast
1/2 teaspoon kosher salt
1/4 teaspoon pepper
1 tablespoon canola oil
1 (16-oz) container fresh salsa
1 (10-oz) can enchilada sauce
1/2 cup hot chocolate powder
1 1/2 teaspoons ground cinnamon
1 tablespoon chipotle pepper sauce


  • Cut beef into bite-size pieces.


  1. Preheat large sauté pan on medium-high 2–3 minutes. Season beef with salt and pepper (wash hands). Place oil in pan, then add beef (in batches, if needed); cook and stir 1–2 minutes or until well browned.
  2. Transfer beef and remaining ingredients to slow cooker. Cover and cook on HIGH 1 1/2–2 hours (or LOW 2 1/2–3 hours) until meat is tender. Serve over rice, if desired.
