Ingredients

6 (20-gr) links frozen chicken apple sausage, chopped
2 medium Granny Smith apples, chopped
2 1/2 cups gluten-free all-purpose flour (or baking mix)
1/4 cup flax seeds
2 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon ground cinnamon, divided
1/2 cup egg substitute
1 cup buttermilk
4 tablespoons buttery-flavor spread
4 tablespoons unsweetened apple sauce
3 tablespoons maple syrup
1/4 cup dried sweetened cranberries
1/4 cup golden raisins
1/2 cup plain nonfat Greek yogurt (optional)

Steps

  1. Preheat oven to 400°F. Chop sausage; chop apples (2 cups). Combine flour, flax seeds, baking powder, baking soda, and 1/2 teaspoon cinnamon; whisk until blended. Stir in egg, buttermilk, buttery spread, and applesauce until a dough forms. Stir in sausage and 1 cup of the apples.
  2. Divide dough and form twelve 1/2-cup biscuits on a baking sheet; bake 15–18 minutes or until a toothpick inserted in center comes out clean.
  3. Place in a small saucepan: remaining 1 cup apples, syrup, cranberries, raisins, and remaining 1/2 teaspoon cinnamon; cook on low 5–6 minutes, stirring occasionally, or until apples are tender. Serve apple compote with biscuits and a dollop of yogurt. Serve.
