Roasted Shrimp and Avocado Crostini

1 Publix Bakery Baguette
3 tablespoons + 2 teaspoons olive oil
1 teaspoon kosher salt, divided
1 teaspoon pepper, divided
8 peeled/deveined large shrimp
1 avocado
Zest and juice of 1 lemon


  1. Preheat oven to 350°F. Slice bread diagonally into eight 1/2-inch thick slices. Coat both sides of bread with 3 tablespoons olive oil and place on baking sheet; season with 1/2 teaspoon salt and 1/2 teaspoon pepper. Bake 5-6 minutes or until toasted.
  2. Toss shrimp with remaining 2 teaspoons olive oil, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Place shrimp on baking sheet; roast 10 minutes or just until shrimp turn pink and opaque. Remove from oven; let stand 2 minutes to cool.
  3. Peel and slice avocado; toss with lemon juice. Place avocado slices on each baguette slice. Top with shrimp and lemon zest.
