Roasted Leg of Lamb Porchetta Style

2 tablespoons capers, drained & chopped
2 tablespoons extra-virgin olive oil
1 lemon, for zest
1 tablespoon fresh oregano leaves, chopped
1 tablespoon fresh rosemary, chopped
2 tablespoons Italian parsley, chopped
1 tablespoon chunky garlic blend paste
1 teaspoon kosher salt
1 teaspoon pepper
1 cup plain Greek yogurt
3 lb boneless leg of lamb, butterflied
Nonstick cooking spray


  1. Combine in large mixing bowl: capers, oil, lemon zest, oregano, rosemary, parsley, garlic paste, salt, pepper, and Greek yogurt until blended. Place lamb into bowl and coat well. Chill overnight.
  2. Preheat grill pan on medium. Remove lamb from bowl and wipe of any excessive marinade (discard marinade). Coat grill pan with spray and place lamb on grill pan. Grill 6–8 minutes on each side, turning as often as needed until 145°F. Transfer lamb to cutting board to rest 5 minutes before slicing and serving with Romesco Sauce (recipe follows).
