1/2 cup unsweetened cocoa powder
3 cups half-and-half, divided
1 cup heavy whipping cream
8 egg yolks
1 1/2 teaspoons vanilla extract
1 cup sugar
1 cup peppermint patty candy, finely chopped


  1. In medium saucepan over medium high heat, mix cocoa powder and 1 cup half-and-half. Whisk until fully combined. Mix in the remaining half-and-half and heavy cream. Bring to a slow simmer. Remove from heat. Place egg yolks, vanilla extract, and sugar in a mixing bowl, whisk until light yellow in color.
  2. Slowly add small amounts of cream mixture into egg mixture while constantly whisking. Once mixed in, return to low heat and cook until thickened slightly, stirring constantly.
  3. Pour mixture into a bowl and set over an ice water bath. Stir and allow mixture to cool until 55°F is reached.
