Ranch Macaroni and Cheese Cups

8 tablespoons Italian bread crumbs, divided
4 oz presliced ham, finely chopped
1 (20-oz) package prepared macaroni and cheese
1 teaspoon ranch seasoning mix (or taco seasoning)
1 cup shredded sharp cheddar cheese, divided
Preheat oven to 400°F. Coat 24-cup mini-muffin pan with cooking spray and 3 tablespoons bread crumbs (discard any excess from pan). Chop ham.
Combine macaroni, ham, seasoning, 1/2 cup cheese, and remaining 5 tablespoons bread crumbs in a bowl; press 1 heaping tablespoon of macaroni mixture into each muffin cup. Bake 10 minutes.
Sprinkle top of each cup with equal amounts remaining 1/2 cup of cheese. Bake 3–4 more minutes or until cheese has melted and topping has browned lightly. Let stand 10 minutes to cool. Serve.
