1/2 cup rice vinegar
1 cup water
1/2 cup sugar
1 teaspoon kosher salt
2 cloves garlic, thinly sliced
2 serrano peppers, thinly sliced
2 carrots, peeled & thinly sliced
2 green onions, thinly sliced
1 small daikon radish, thinly sliced


  1. Combine in 3-quart saucepot: vinegar, water, sugar, and salt until blended. Bring to a boil on medium until sugar and salt are dissolved.
  2. Combine remaining ingredients in large bowl until blended. Pour vinegar mixture over vegetables and toss to coat. Cool to room temperature before serving.
NOTE: Pickled vegetables can be stored in a sealed container in the refrigerator for up to 7 days.
