Ingredients

8 oz whole baby portabellas
1 large sweet onion, grated
1 lb ground chuck
2 teaspoons Montreal steak seasoning
2 teaspoons Worcestershire sauce
1 1/4 cups shredded Swiss cheese, divided
12 dinner rolls, sliced into buns
24 dill pickle chips
1/4 cup yellow mustard

Steps

  1. Preheat large, nonstick sauté pan on medium-high 2–3 minutes. Place mushrooms in food processor bowl; process until finely chopped. Add mushrooms to pan; cook 4–5 minutes, stirring occasionally, or until moisture has evaporated. Let stand 5 minutes to cool. Grate onion (about 1/2 cup).
  2. Preheat grill (or grill pan). Combine beef, seasoning, Worcestershire, mushrooms, onions, and 3/4 cup cheese; mix well. Shape beef mixture into 12 patties (wash hands).
  3. Grill patties 1–2 minutes on each side until browned and 160°F; top with remaining 1/2 cup cheese and let melt. Place patties on bottom buns, then top with 2 pickle chips, mustard, and top buns. Serve.
