Prosciutto-Wrapped Green Beans with Goat Cheese

1 (8-oz) package fresh French green beans
8 thin slices prosciutto
1 (4-oz) Deli goat cheese log
1/4 cup maple syrup
2 teaspoons Dijon mustard
1/4 cup red wine vinegar
1/4 cup extra-virgin olive oil


  1. Microwave green beans following package instructions. Place prosciutto slices on flat surface. Place 1 tablespoon goat cheese at one end of each prosciutto slice. Add 8–10 beans over goat cheese, then roll forward to create wrapped green beans.
  2. Combine remaining ingredients; whisk until blended. Place wrapped green beans on platter; drizzle with dressing.

Other Preparation Methods

  • Appetizer: Form 4 oz log goat cheese into 1-inch balls, then roll in 1 cup finely chopped pecans; chill until firm. Serve.
  • Dip: Whisk 4 oz softened goat cheese with 1/4 cup sour cream (or yogurt), 1 tablespoon garlic paste, and lemon zest to taste. Serve with pita chips.
