Ingredients

4 pomegranates
2 (0.25-oz) packets unflavored gelatin
1/4 cup sugar
Whipped cream (optional)

Steps

  1. Cut ends off fruit. Score skin (1/4-inch deep) from top to bottom along slight ridges; break into quarters. Submerge in water; use thumbs to gently remove arils from flesh, then strain.
  2. Reserve 1/2 cup arils. Place remaining arils in blender; blend until juiced, then strain. Place 1/2 cup juice in medium bowl; sprinkle with gelatin.
  3. Bring remaining 1 1/2 cups juice and sugar to boil in small saucepan, then stir into gelatin mixture. Transfer to 4 serving cups; top with arils and whipped topping, if desired. Chill 1 hour or until set.

Other Preparation Methods

  • Spritzer: Combine 1 cup pomegranate juice with 1/2 cup strawberry lemonade. Pour into 4 ice-filled glasses. Top with 1/2 cup chilled seltzer water.
  • Garnish: Use pomegranate arils to sprinkle over a tossed green salad; add to guacamole; jazz up oatmeal; brighten up plain, vanilla, or honey yogurt; or add a little sparkle to fresh-cut fruit salad.
