2/3 cup canola oil
3 ripe plantains
1/4 cup coconut sugar


  1. Preheat oil in large sauté pan on medium 2–3 minutes. Cut ends off of plantains, and peel skin. Cut plantains in half, then cut each piece in half lengthwise. Coat plantains with sugar.
  2. Fry plantains (in batches) 2–3 minutes on each side or until golden. Remove from pan and drain on paper towels; serve warm.
