2 bell peppers, halved lengthwise
1/4 cup pepperoni slices
2 tablespoons bread crumbs
1/4 cup Italian-blend shredded cheese


  1. Preheat oven to 400°F. Remove seeds and stem from peppers and place cut-side up on baking sheet.
  2. Chop pepperoni coarsely; combine bread crumbs, pepperoni, and cheese. Fill each pepper with cheese mixture; bake 15–18 minutes or until peppers are tender and cheese is melted.

Other Preparation Methods

  • Sauté: Slice 2 bell peppers into strips. Cook with 1 tablespoon oil on medium with garlic and sliced onions for 7–9 minutes or until tender.
  • Grill: Cut 2 bell peppers into 1-inch-wide strips; grill with onions and mushrooms for 8–10 minutes or until tender.
