Pesto-Dijon Chicken Breasts with Cauli Broccoli Mix

1 3/4 lb boneless, skinless chicken breasts
2 teaspoons Montreal chicken seasoning
1 tablespoon olive oil
1 tablespoon lemon juice
3 tablespoons basil pesto
1 tablespoon Dijon mustard
1 cauli broccoli mix (oven/microwave) bag (Produce)


  1. Coat chicken with seasoning (wash hands). Preheat oil in large sauté pan, then add chicken. Cook 6–8 minutes on each side, turning occasionally, until browned and 165°F. Transfer to cutting board; let stand 5 minutes to rest.
  2. Combine lemon juice, pesto, and mustard; set aside. Microwave cauli broccoli mix bag on HIGH for 3–5 minutes until tender. Let stand 1 minute to cool.
  3. Tear bag at dotted line and pour into serving dish. Slice chicken; toss with vegetables and sauce. Serve.
