Penne and Cheese

3 cups multi-grain penne pasta (about 8 oz)
1 cup frozen mixed vegetables
1 (14-oz) can fat-free evaporated milk
2 tablespoons all-purpose flour
1/4 teaspoon kosher salt
1/8 teaspoon pepper
1 oz sliced American cheese
1 1/4 cups shredded reduced-fat cheddar cheese


  1. Cook pasta following package instructions. Add the vegetables to the pasta during the last 2 minutes of cook time. Drain pasta mixture and transfer to medium bowl.
  2. Combine milk, flour, salt, and pepper in medium saucepan on medium heat; cook and stir 4–5 minutes or until thick and hot. Tear American cheese into small pieces.
  3. Stir both cheeses into sauce; cook and stir 1–2 minutes or until melted. Stir sauce into pasta mixture; serve.
