Old Fashioned Oatmeal Cookies

1 cup packed brown sugar
1/2 cup sugar
3/4 cup vegetable shortening
1/4 cup water
1 large egg (or 1/4 cup egg substitute)
1 teaspoon vanilla extract
3 cups old-fashioned oats
1 cup flour
1/2 teaspoon baking soda
1 teaspoon kosher salt (optional)


  1. Preheat oven to 350°F. Lightly grease cookie sheet(s).
  2. Beat sugars, shortening, water, egg, and vanilla until creamy. Combine oats, flour, baking soda, and 1 teaspoon salt (if desired).
  3. Add oats mix to shortening mixture; mix well. Drop by rounded tablespoons onto prepared cookie sheet(s), about 2 inches apart.
  4. Bake 12–14 minutes, or until light golden brown. Let stand 1 minute before removing cookies to racks to cool. Makes 6 dozen.

Other Preparation Methods


Stir in 1 cup of any of the following with oats: semi-sweet chocolate chips, raisins, chopped walnuts, chopped dates, or shredded coconut.

Add 1 teaspoon ground cinnamon, and 1/2 teaspoon ground nutmeg to flour mixture.
