Nectarines with Mascarpone

Nectarines with Mascarpone

4 oz mascarpone cheese
2 oz vanilla Greek yogurt
1/2 teaspoon vanilla extract
3 tablespoons unsalted butter
7 nectarines
1/4 cup brown sugar
1/4 cup amaretto


  1. Place mascarpone, yogurt, and vanilla in medium bowl; beat with electric mixer until smooth and airy. Chill mixture until ready for use.
  2. Preheat large sauté pan on medium 2–3 minutes. Remove pits from nectarines; cut nectarines into slices (about 4 cups). Melt butter in pan, then add nectarines and brown sugar; cook 10–12 minutes, stirring occasionally, or until sugar has dissolved. Stir in amaretto; cook 4–5 minutes or until sauce had reduced and fruit has softened.
  3. Divide mascarpone mixture evenly among 4 serving bowls; top with even amounts fruit and pan syrup. Serve.
