1 cup lentils
1 large carrot, chopped
1 lemon, for juice
1/4 cup mojo marinade
2 tablespoons water
1 teaspoon dried oregano
8 oz prediced fresh tomatoes (1 1/4 cups)
1 cup trinity mix (fresh diced onions, bell peppers, celery)
1 cup reduced-sodium cannellini beans, drained/rinsed
1/2 cup diced pimientos
1/4 cup prediced green onions
1 1/2 teaspoons reduced-sodium rotisserie chicken seasoning
Steps
Prepare lentils following package instructions. Chop carrot. Squeeze lemon for juice (2 tablespoons). Drain lentils and chill for 10 minutes.
Whisk in large bowl: lemon juice, mojo, water, and oregano until blended.
Stir remaining ingredients (including lentils) into dressing until well blended. Chill 30 minutes to blend flavors. Serve.
