Ingredients

2 teaspoons ground ginger
1 1/2 tablespoons ground red pepper
1 teaspoon ground allspice
2 teaspoons garlic powder
2 teaspoons kosher salt
4 tablespoons olive oil
4 ripe yellow plantains, peeled & cut into bite-sized cubes
Vegetable oil, for frying

Steps

  1. Combine in large mixing bowl: ginger, red pepper, allspice, garlic powder, salt, and oil until blended. Add plantains and toss to coat.
  2. Preheat vegetable oil in cast iron skillet over medium-high to 350°F. Fry plantains 2–3 minutes, turning a few times as needed, until golden brown. Drain on paper towel-lined baking sheet; cool slightly before serving.
