1 orange, for zest/juice
2 tablespoons white balsamic vinegar
1 tablespoon chopped dates
1 tablespoon coarse Dijon mustard
1/8 teaspoon black pepper
2 cups kale leaves, chopped
1 1/2 cups red cabbage, chopped
2 small Granny Smith apples, cored and chopped


  1. Zest/grate orange (1/2 teaspoon); squeeze orange for juice (2 tablespoons). Whisk in large bowl: orange zest, juice, vinegar, dates, mustard, and black pepper until blended.
  2. Chop kale, cabbage, and apples into small pieces. Add kale, cabbage, and apples to dressing; toss until evenly coated. Cover and chill 2 hours (or overnight). Serve.
