Jalapeño Popper Hamburgers

1/2 medium red onion
8 frozen cheese-stuffed jalapeños
4 (6-oz) ground beef patties
1/2 teaspoon kosher salt
1/4 teaspoon pepper
4 slices pepper Jack cheese (about 4 oz)
8 teaspoons Cheddar jalapeño soft cream cheese
4 Bakery hamburger buns
1 cup baby spinach leaves


  1. Preheat oven to 450°F. Preheat grill pan (or grill). Slice onion; set aside. Bake 8 stuffed jalapeños following package instructions.
  2. Season patties with salt and pepper and place in pan (or on grill); grill 3–4 minutes on each side or until meat is 160°F. During last minute of grill time, top each patty with 1 cheese slice (to melt cheese).
  3. Spread 1 teaspoon cream cheese over each half of buns. Top bottom half of each bun with: beef patty, onions, 1/4 cup spinach, 2 stuffed jalapeños, and top half of bun. Serve.
