Ingredients

1 medium green bell pepper, coarsely chopped
2 tablespoons olive oil
1 1/2 lb bulk mild Italian sausage
3/4 cup prediced yellow onions
1 teaspoon minced garlic
2 (15.5-oz) cans cannellini beans, drained and rinsed
2 (14.5-oz) cans diced tomatoes with basil, garlic, and oregano, undrained
1 cup pasta sauce
1 1/2 tablespoons chili powder
1 tablespoon brown sugar
1 teaspoon Italian seasoning
1 teaspoon Worcestershire sauce
3/4 teaspoon crushed red pepper
3/4 teaspoon kosher salt
1/4 teaspoon ground cumin
1/4 teaspoon pepper
1 cup shredded Italian cheese blend (optional)

Steps

  1. Chop green pepper (1/2 cup). Preheat large stockpot on medium-high 2–3 minutes. Place oil in pot, then add sausage; brown 5–7 minutes, stirring to crumble meat, and until no pink remains. Stir in peppers, onions, and garlic; cook 3–4 minutes or until tender.
  2. Drain and rinse cannellini beans. Stir remaining ingredients into pot (except cheese); reduce heat to low. Cover and simmer 40–45 minutes or until flavors have blended. Serve chili topped with cheese, if desired.
