1 cup sushi rice
1 1/4 cups water
1 teaspoon kosher salt
2 tablespoons seasoned rice vinegar
1/2 seedless cucumber, finely chopped
1/2 lb chilled Deli chicken tenders, finely chopped
1/3 cup spicy mayonnaise
1 tablespoon sesame oil
2 tablespoons sesame seeds
Reduced-sodium soy sauce (optional)


  1. Cook rice following package instructions (using the water and salt).
  2. Stir vinegar into rice; chill 10 minutes to cool. Peel and chop cucumber (1 cup). Chop chicken; toss with mayonnaise.
  3. Coat cups of two (12-compartment) ice cube trays with oil. Place 1 heaping teaspoon of rice in each cup, pressing in firmly.
  4. Top rice evenly with cucumber and chicken, pressing in firmly. Finish with 1 more heaping teaspoon of rice, pressing in firmly. Invert trays onto serving dish; sprinkle evenly with sesame seeds, pressing to adhere. Serve with soy sauce, on the side for dipping, if desired.
