Ingredients

3 lb whole beef tenderloin

2 teaspoons steak seasoning

2 tablespoons fresh thyme, finely chopped

1 large shallot, finely chopped

3 cloves garlic, finely chopped

2 teaspoons fresh lemon zest

2 tablespoons olive oil

1 tablespoon Dijon mustard

Steps


1. Preheat oven to 450°F. Season meat with steak seasoning. Combine remaining ingredients; rub herb mixture over meat and place in roasting pan.
2. Place meat in oven; immediately reduce oven temperature to 375°F. Roast 35-45 minutes or until meat is 145°F (for medium rare). Let roast stand 10 minutes to rest before slicing.

Other Preparation Methods
Grill: Preheat grill on HIGH (500°F). Season 3 lb whole beef tenderloin with 1 tablespoon oil and 2 teaspoons garlic/herb seasoning. Place meat over direct heat; grill 3-4 minutes on each side or until browned. Reduce heat on grill to medium. Place meat over indirect heat and close lid (or cover); grill 40-45 more minutes, turning occasionally, or until meat is 145°F for medium rare.
