1 tablespoon fresh mint, finely chopped
1 tablespoon fresh oregano, finely chopped
1 tablespoon Dijon mustard
3 tablespoons extra-virgin olive oil
1 teaspoon garlic salt
8 (1 1/4-inch-thick) lamb loin chops (about 2 lb)


  1. Preheat grill. Combine mint, oregano, mustard, oil, and salt. Coat chops in oil mixture.
  2. Grill over direct heat, 3–4 minutes on each side, and until 145°F (for medium-rare).

Other Preparation Methods

  • Bake: Preheat oven to 425°F. Combine 1 tablespoon basil pesto, 3 tablespoons extra-virgin olive oil, and 1/4 teaspoon red pepper flakes; coat 8 (1 1/4-inch-thick) lamb loin chops (about 2 lb). Bake 8–10 minutes, until 145°F (for medium-rare).
  • Broil: Preheat broiler. Combine 1 tablespoon smoked paprika, 1 teaspoon kosher salt, and 2 tablespoons olive oil; coat 8 (1 1/4-inch-thick) lamb loin chops (about 2 lb). Broil on middle rack for 7–8 minutes, until 145°F (for medium-rare).
