1 large yellow onion, coarsely chopped
3 smoked sausage links (7–9 oz)
2 tablespoons unsalted butter
1 (8-oz) package cooked ham chunks
2 cans pinto beans (15–16 oz each), drained
1 can great Northern beans (15–16 oz), drained
1 (32-oz) box reduced-sodium chicken broth
1 bay leaf


-- Chop onion.

-- Cut sausage into bite-size pieces.


  1. Chop onion. Cut sausage into bite-size pieces. Preheat stockpot on medium 2–3 minutes. Place butter, sausage, ham, and onions in pot; cook and stir 3–4 minutes or until onions have softened.
  2. Drain all beans. Stir in broth, beans, and bay leaf; simmer 25–30 minutes or until mixture reduces by about one-half. Remove bay leaf and serve.
