Ingredients

1 lemon, for juice
1 lb chicken tenderloins
Cooking spray
2 teaspoons salt-free garlic-herb seasoning
6 whole wheat pita pockets
1/2 seedless cucumber
3/4 cup cucumber-dill dressing (or dip)
2 1/4 cups shredded lettuce
6 tablespoons tomato bruschetta (or salsa)

Steps

  1. Preheat grill (or grill pan). Squeeze lemon for juice (2 tablespoons). Coat chicken with spray and seasoning (wash hands). Grill chicken 3–4 minutes on each side until grill-marked and 165°F. Remove from grill and drizzle with lemon juice. Let stand to cool 5 minutes.
  2. Warm pita pockets following package instructions (if desired).
  3. Cut cucumber (about 1 cup) and chicken into bite-size pieces. Spread 2 tablespoons dressing inside each pita, then fill with even amounts lettuce, chicken, and cucumber. Top each with 1 tablespoon bruschetta. Serve.
