Ingredients

1 medium container fresh pineapple chunks
12 (6-inch) wooden skewers
Cooking spray
6 large plum tomatoes
1 (12-oz) jar roasted red peppers
1 fresh jalapeño, seeded
1 tablespoon fresh garlic
1/2 cup fresh cilantro
2 limes, for zest/juice
1/4 teaspoon kosher salt
1/4 teaspoon pepper

Steps

  1. Preheat grill (or grill pan). Thread pineapple onto skewers; coat skewers with spray. Grill skewers 5–6 minutes, turning often, or until grill-marked. Let stand 5 minutes to cool.
  2. Chop tomatoes, roasted red peppers, jalapeño (removing seeds), garlic, cilantro, and grilled pineapple finely. Zest lime (2 teaspoons); squeeze for juice (2 tablespoons). Combine all ingredients; cover and chill 1 hour.
  3. Serve salsa with chips or over cooked chicken or pork.
