Grilled New York Strip with Blue Cheese Butter

1 tablespoon + 2 teaspoons garlic spice paste, divided
3/4 teaspoon seasoned salt, divided
1/4 teaspoon pepper
1/4 cup soy sauce
1 3/4 lb New York strip steaks
1/4 teaspoon onion powder
4 tablespoons unsalted butter, softened
2 oz crumbled blue cheese (3 tablespoons)
Cooking spray


  1. Combine in large pan: 1 tablespoon garlic paste, 1/2 teaspoon seasoned salt, pepper, and soy sauce, then place steaks in marinade, turning to coat all sides (wash hands); let stand 10 minutes to marinate.
  2. Combine in small bowl: remaining 2 teaspoons garlic paste, onion powder, remaining 1/4 teaspoon seasoned salt, blue cheese, and softened butter; mix until well blended.
  3. Preheat grill (or grill pan). Coat steaks with spray (discarding marinade), then grill 3–4 minutes on each side and until 125°F (for medium rare), 130°F (for medium), or up to 170°F (for well done). Remove steaks; let stand 5 minutes before slicing. Top with blue cheese butter.
NOTE: The temperatures for medium rare and medium are traditional temperatures for cooking steaks, but are not recommended by the USDA. To maintain food safety, the USDA recommends an internal temperature of 145°F, as measured with a food thermometer, with a 3-minute rest time before slicing.

Other Preparation Methods

  • Reverse Sear: Preheat oven to 275°F. Season 1 (2-inch-thick) steak with 1 teaspoon kosher salt and 1/2 teaspoon pepper. Place on baking sheet with flat roasting rack. Roast 40–45 minutes or until steak is 120°F. Preheat medium sauté pan on medium-high heat 2–3 minutes; place 2 tablespoons oil in pan and add steak. Cook 2–3 minutes on each side and until steak is at least 125°F (for medium rare). Remove steak; let stand 5 minutes before slicing.
