Grilled Beef Tenderloin and Warm Bean Salad

1 medium red onion, sliced
4 beef tenderloin steaks (about 1 1/2 lb)
2 tablespoons olive oil
1 teaspoon Montreal steak seasoning
1/4 cup lemon vinaigrette (or light balsamic vinaigrette)
1 (15.5-oz) can cannellini beans, drained and rinsed
4 cups spring mix


  1. Preheat grill (or grill pan). Coat onion and steak with oil and seasoning (wash hands).
  2. Grill steaks 2–3 minutes on each side and until 145°F (for medium). Grill onions, turning occasionally, until tender. Let steaks stand 5 minutes before slicing.
  3. Chop onions. Toss onions, beans, and vinaigrette; arrange on top of greens. Slice steak and serve on top of bean salad.

Other Preparation Methods

  • ROAST: Preheat oven to 400°F. Season 1 (1 1/2 lb) beef tenderloin with 1 teaspoon each kosher salt and cracked black pepper. Preheat large, cast-iron skillet on medium-high 2–3 minutes. Place 1 tablespoon oil in skillet and add beef. Cook 2–3 minutes on each side or until browned. Place skillet in oven; roast 5–6 minutes or until beef is at least 125°F (for medium-rare). Remove beef from skillet; let stand 5 minutes before slicing.
