GreenWise Chopped Chicken Salad

1/2 cup grape tomatoes
1/3 seedless cucumber
1/2 cup sliced mini sweet peppers
8 oz fully cooked sea salt & black pepper chicken
1 (5-oz) container spring mix blend
1/2 cup shredded carrots
1/4 cup crumbled blue cheese
1/4 cup Caesar dressing
1/4 cup honey-glazed pecan pieces


Tossed Method
  1. Slice tomatoes in half. Peel and slice cucumber into half-moons. Cut chicken into bite-size pieces, if desired.
  2. Add spring mix and remaining ingredients to large mixing bowl; toss to coat and divide evenly between 2 bowls.
Compartmentalized Method
1. Evenly divide spring mix into 2 salad bowls. Halve tomatoes; peel and slice cucumber into half-moons. Cut chicken into bite-size pieces.
2. Layer remaining ingredients on top, in this order: tomatoes, cucumber, sweet peppers, chicken, carrots, blue cheese, and pecan pieces; top with dressing. Serve.
