1 (32-oz) container grape tomato and squash spirals
1/2 cup cilantro, chopped
1 tablespoon fresh oregano, chopped
1/2 jalapeño pepper, diced (optional)
1 shallot, shaved
1 clove garlic, minced
2 limes, for juice
1 tablespoon tomato paste
1/4 cup seasoned rice vinegar
1/2 teaspoon kosher salt
1/4 teaspoon pepper


  1. Slice tomatoes in half lengthwise. Chop cilantro and oregano; dice jalapeño (if desired). Shave shallot and mince garlic, then squeeze lime for juice (1/4 cup).
  2. Combine in small bowl: tomato paste, vinegar, and lime juice until blended.
  3. Combine in large bowl: tomato, squash spirals, cilantro, oregano, jalapeño, shallots, and garlic until blended. Add lime juice mixture to large bowl; toss to coat.
  4. Season with salt, and pepper and let sit at room temperature for 2 hours, stirring occasionally. Serve.
