Ingredients

1/2 cup unsalted butter, softened
3/4 cup brown sugar
1 large egg (or 1/4 cup egg substitute)
1/3 cup molasses
2 tablespoons water
2 2/3 cups flour
1/2 teaspoon kosher salt
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground clove
2 teaspoons ground ginger

Steps

  1. Place butter and sugar in large bowl; beat with electric stand (or hand) mixer until light and fluffy. Add egg, molasses, and water; beat until combined.
  2. Combine flour, salt, baking soda, cinnamon, cloves, and ginger until blended. Add flour mixture to butter mixture; beat until combined.
  3. Divide dough in half and place on large pieces of wax paper. Fold paper over and press to form 1/2-inch thick discs. Chill 30 minutes or until firm.
  4. Preheat oven to 350°F. Roll out dough between wax paper to about 1/4-inch thick. Cut out gingerbread people, using a floured cookie cutter. Place cookies on nonstick baking sheet 2 inches apart.
  5. Bake 8–10 minutes or until golden on edges. Let stand 5 minutes to cool on baking sheet. Transfer gingerbread people to cooling rack for 15 minutes or until completely cooled. Decorate as desired; serve.
