Ingredients

4 ears fresh corn
3 medium tomatoes, coarsely diced
1 tablespoon fresh cilantro, finely chopped
1/3 cup prediced bell peppers (red and/or green)
1 tablespoon fresh lemon juice
1/4 cup Italian salad dressing
1 tablespoon green pepper sauce

Steps

  1. Remove corn husks and silks; slice kernels off cobs (2–3 cups) into medium bowl. Scrape cobs with back of knife to release remaining juices.
  2. Dice tomatoes and chop cilantro; add to corn. Stir in remaining ingredients. Let stand 5 minutes for flavors to blend. Serve.
